There are lots of tiny particles/molecules in the atmosphere. Light scatters off these in all directions. Energetic blue light scatters more than lazy red. So in the daytime, more blue light scatters to our eyes and we see the sky as blue.
At sunset, the sun is far away and light must go through a LOT more atmosphere to get to us. The blue light is busy scattering off to make the sky in California blue, leaving only long wavelengths (red) to pass through. That’s why the sunset is red.
